Green Beans & Asparagus Tips Salad for Vata
Serves: 1
Ingredients
- 1/2 cup diced green beans
- 1/2 cup asparagus tips
- 1 tsp extra-virgin olive oil
- 1 tbsp toasted pine nuts
- 1 tsp lemon juice
- Fresh ground black pepper to taste
- Rock salt to taste
- 1 tsp fresh chopped tarragon
- 1/2 tsp lemon zest
Preparation

Steam green beans and asparagus tips until tender but not mushy.
- In a bowl, whisk together the olive oil, lemon juice, tarragon, lemon zest, salt and pepper.
- Blend together the vegetables and the dressing and garnish with the toasted pine nuts.
- Serve warm or at room temperature.
