Ginger Tea

Makes 3-4 cups

Ingredients

  • 1 quart water
  • 2 inches fresh ginger root
  • 2 mint tea bags
  • Honey (only add honey when water cooled to drinkable temperature)
  • Lemon

Preparation

  1. Boil water in a saucepan or tea pot.
  2. Peel and mash ginger and add to the boiling water.
  3. Reduce heat and simmer for 30 — 45 minutes, depending on how pungent you want the tea to be.
  4. Strain and add honey for VATA and KAPHA and lemon juice for VATA if desired.
